  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup unsalted butter (room temperature)
  • ½ cup granulated sugar
  • ½ cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple (peeled and finely chopped)
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, ground cinnamon, and salt.
  3. In a large bowl, beat together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture until just combined.
  6. Fold in the finely chopped apple until evenly distributed in the dough.
  7. In a separate bowl, mix together granulated sugar and ground cinnamon for rolling.
  8. Roll tablespoon-sized portions of dough into balls and coat in the cinnamon-sugar mixture.
  9. Place dough balls on the prepared baking sheet about 2 inches apart and bake for 8–10 minutes until edges are golden brown.
  10. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
