  • 1 cup dried apricots, chopped
  • 1/2 cup water
  • 1 1/4 cups all-purpose flour
  • 1 1/4 cups old-fashioned rolled oats
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a small saucepan over medium heat, combine chopped apricots and water. Simmer for about 10 minutes until the apricots are soft and most water has evaporated. Let cool.
  3. In a large mixing bowl, combine flour, oats, brown sugar, baking soda, and salt.
  4. In another bowl, whisk together melted butter, honey, and vanilla until smooth.
  5. Stir wet ingredients into dry ingredients until it forms a crumbly dough.
  6. Press half the mixture into the bottom of the prepared pan.
  7. Spread the cooled apricot mixture evenly on top.
  8. Sprinkle remaining oat mixture over apricots; press down gently.
  9. Bake for 25-30 minutes until golden brown on top.
  10. Allow to cool completely in the pan before slicing into squares.
