  • 1/2 cup packed brown sugar
  • 1/4 tsp baking soda
  • 1 1/4 cups rolled oats
  • 3/4 cup flour
  • 1 cup apricot preserves

Instructions

  1. Preheat your oven to 350°F and grease an 8×8 or 9×9 baking dish.
  2. In a mixing bowl, combine softened butter, brown sugar, baking soda, rolled oats, and flour until the mixture is crumbly.
  3. Reserve 2 cups of the oat mixture and press the remainder into the bottom of the prepared baking dish to form a crust.
  4. Spread apricot preserves evenly over the crust.
  5. Top with the reserved oat mixture and bake for 30-35 minutes until golden brown.
  6. Allow to cool completely before cutting into squares.
