Asian Noodle Salad in Peanut Dressing is a vibrant, refreshing dish that combines tender egg noodles with an array of crunchy vegetables, all enveloped in a rich and flavorful peanut dressing.

  • 150g medium egg noodles
  • 1 large carrot (julienned)
  • 5 radishes (sliced)
  • 3 cups red cabbage (thinly sliced)
  • 2 tablespoons chunky peanut butter
  • 1 tablespoon honey
  • 4 tablespoons soy sauce
  • 2 teaspoons Sriracha sauce

Instructions

  1. Cook the egg noodles according to package instructions; drain and set aside.
  2. In a small bowl, whisk together peanut butter, honey, soy sauce, sesame oil, rice vinegar, grated ginger, pressed garlic, and Sriracha until smooth.
  3. Toss the hot noodles with the dressing in a large mixing bowl until well coated; allow to cool.
  4. Add julienned carrots, sliced radishes, chopped cabbage, green onions, and cilantro to the cooled noodles; mix thoroughly.
  5. Serve chilled or at room temperature.
