  • 500 g boneless, skinless chicken thighs
  • 1 tablespoon lemon juice
  • 1/3 cup plain yogurt
  • 1/2 tablespoon garlic paste
  • 1 teaspoon ginger paste
  • 1 teaspoon red chili powder
  • 1 tablespoon Kashmiri chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon chaat masala
  • 1 teaspoon kasuri methi
  • 1/2 tablespoon mustard oil
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. First Marination: Mix chicken with lemon juice, garlic paste, ginger paste, salt, and red chili powder. Marinate for 30–45 minutes in the refrigerator.
  2. Second Marinade: Combine remaining ingredients in a bowl to create the tandoori marinade. Drain excess water from chicken and coat thoroughly with the marinade. Marinate for 8 hours or up to 3 days.
  3. Cook: Choose between grilling on a stovetop pan, air frying at 450°F for 10–13 minutes, or baking in an oven preheated to 450°F for about 10–12 minutes per side until charred.
