  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 large eggs
  • 1 cup chopped baby spinach
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
  • Chopped fresh basil or fresh chives (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In individual ramekins or a large baking dish, layer the tomatoes, bell pepper, onion, garlic, and feta cheese. Drizzle with olive oil.
  3. Combine oregano, salt, thyme, black pepper, and red pepper flakes in a bowl; sprinkle over the veggies and feta.
  4. Bake for 25 minutes until veggies are tender.
  5. Stir in the spinach and create wells for the eggs. Crack an egg into each well.
  6. Bake for an additional 10 minutes until the eggs are set to your liking.
  7. Serve warm with fresh herbs if desired.
