  • 1.52 lb boneless, skinless chicken thighs
  • 1 cup BBQ sauce (divided)
  • 2 cups Napa cabbage (shredded)
  • 2 cups red cabbage (shredded)
  • ⅔ cup Greek yogurt
  • Burger buns (4–6)

Instructions

  1. In a slow cooker, combine ¾ cup BBQ sauce, dijon mustard, apple cider vinegar, and water. Season chicken thighs with salt, pepper, garlic powder, and cumin. Add to the slow cooker and coat well. Cover and cook on high for 2-3 hours or low for 4-5 hours until fully cooked.
  2. Shred the cooked chicken with forks and stir in the remaining BBQ sauce. Keep warm.
  3. For the coleslaw, mix Greek yogurt, water, apple cider vinegar, lemon juice, garlic powder, kosher salt, black pepper, dijon mustard, and honey in one bowl. In another bowl, combine shredded cabbages and carrots; pour dressing over veggies and mix well.
  4. Assemble burgers by placing pulled chicken on the bottom half of each bun, adding coleslaw on top. Drizzle with additional BBQ sauce if desired.
