  • ½ yellow onion, grated
  • 2 pounds ground beef
  • 2 garlic cloves, minced
  • 1¼ teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon rosemary
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Optional: 1 teaspoon sumac
  • ½ teaspoon cinnamon

Instructions

  1. Preheat the grill to medium-high heat and oil the grates.
  2. Squeeze excess moisture from the grated onion using a clean kitchen towel.
  3. In a mixing bowl, combine ground beef, squeezed onion, garlic, salt, pepper, rosemary, cumin, oregano, sumac (if using), and cinnamon. Mix until just combined.
  4. Divide the meat mixture into eight equal portions and shape onto skewers.
  5. Grill kebabs for about 8–10 minutes, turning occasionally until slightly charred and cooked through.
  6. Serve with tzatziki sauce, diced cucumbers, tomatoes, feta cheese, parsley, and warm pita bread.
