  • 3 tbsp (38 g) granulated white sugar
  • 1/2 tsp vanilla
  • 1/4 cup (50 g) granulated white sugar
  • 2 tsp (3 g) black cocoa powder
  • 1 1/2 cups (188 g) all-purpose flour, spooned and leveled
  • 1/2 cup (40 g) black cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla

Instructions

  1. Prepare the cheesecake filling by blending cold cream cheese with granulated sugar and vanilla until smooth. Refrigerate while preparing cookie dough.
  2. Preheat oven to 350°F (175°C). In a large bowl, beat softened butter with light brown and granulated sugars until fluffy. Incorporate egg yolks and vanilla.
  3. Whisk together flour, black cocoa powder, baking powder, and salt in another bowl. Gradually mix into wet ingredients until just combined.
  4. Scoop one tablespoon of dough, flatten it, place a teaspoon of cheesecake filling in the center, fold dough around it, and roll into a ball.
  5. Bake on parchment-lined sheets for 10-12 minutes until set but soft in the center. Cool before serving.
