  • 1 1/4 cups granulated sugar
  • 6 large egg whites
  • 1 tbsp lemon zest
  • 1/3 cup lemon juice
  • 8 oz mascarpone cheese

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8-inch cake pans.
  2. In a bowl, mix dry ingredients: cake flour, baking powder, and salt.
  3. In another bowl, combine wet ingredients: milk, sour cream, and egg whites.
  4. Beat butter and sugar until light and fluffy, then add lemon zest and juice.
  5. Gradually mix in dry ingredients with wet ingredients until combined.
  6. Divide batter between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool before frosting with mascarpone buttercream and layering with blackberry curd.
