  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 2/3 cup cold butter
  • 2 eggs
  • 8 oz. mascarpone cheese
  • 8 oz. cream cheese
  • 1 and 2/3 cups blueberries
  • Powdered sugar for glaze

Instructions

  1. Preheat your oven to 350°F and prepare a springform pan with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, salt, and sugars. Add cold butter and mix until grainy.
  3. Stir in eggs and vanilla until crumbly; press two-thirds into the prepared pan.
  4. For the filling, blend cream cheese, mascarpone, sugar, corn starch, and eggs until smooth.
  5. Layer half of the cheesecake mixture over the crust, sprinkle with blueberries, then add remaining cheesecake mixture on top.
  6. Top with more blueberries and reserved crumbs before baking for 65-75 minutes.
  7. Allow to cool and prepare glaze by mixing powdered sugar with milk.
