  • 3 ripe peaches
  • 3 Tbsp butter (or vegan alternative)
  • 2 Tbsp brown sugar
  • 1 tsp vanilla extract
  • 4 Tbsp rolled oats
  • 3 Tbsp oat flour
  • Optional: Vanilla ice cream for serving

Instructions

  1. Wash and dry the peaches, then slice them in half and remove the pits.
  2. In a skillet over medium heat, melt 2 Tbsp butter with brown sugar and vanilla until simmering.
  3. Add peach halves cut side down to the skillet. Cover and cook for 3-5 minutes until caramelized.
  4. Transfer peaches to a serving dish to cool slightly.
  5. In the same skillet, combine rolled oats, oat flour, cinnamon, and remaining butter until clusters form; let cool.
  6. Serve warm peaches topped with ice cream and oat crumble.
