  • 6 chai tea bags
  • 2 cloves
  • 1 stick cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon allspice
  • 3 teaspoons powdered vegan gelatin
  • ⅓ cup white granulated sugar
  • 1 ½ cups thickened cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Infuse the milk by heating it with chai tea bags and spices until just below boiling. Steep for about 10 minutes.
  2. Bloom the vegan gelatin in cold milk for about 5 minutes.
  3. Combine the steeped milk with the dissolved gelatin, sugar, heavy cream, vanilla extract, and salt.
  4. Pour into serving glasses and refrigerate for at least 4 hours until set.
  5. Prepare pistachio toffee by cooking sugar and water until golden brown, then mix in chopped pistachios.
  6. Serve chilled with pistachio toffee on top.
