  • 1 small onion
  • ½ cup bell pepper
  • 3 cloves garlic
  • 1 packet chili seasoning mix
  • 2 cups uncooked macaroni
  • 1½ cups cheddar cheese
  • ½ cup heavy cream
  • ½ cup chicken broth
  • 1 tablespoon tomato paste
  • 8 oz. tomato sauce
  • 14.5 oz. can diced tomatoes (undrained)
  • 1 15 oz. can kidney beans, drained
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon each: salt/pepper
  • ½ teaspoon hot sauce
  • Fresh parsley for garnish

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked.
  2. Add diced onions, bell peppers, and garlic; sauté until softened.
  3. Stir in chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Simmer for about 10 minutes.
  4. In a separate saucepan, melt butter and whisk in flour until smooth. Gradually add heavy cream and milk until thickened.
  5. Combine cooked macaroni with the chili mixture and stir in cheese sauce along with seasonings.
  6. Serve warm garnished with fresh parsley.
