  • 3 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tablespoons butter
  • 2 teaspoons cornstarch
  • 1/4 cup water
  • 1/2 cup pure maple syrup
  • 1/4 cup orange juice
  • 1/4 cup apricot preserves
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon reduced sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 11 1/2 teaspoons chipotle chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon oregano
  • 1/4 teaspoon pepper
  • 1 teaspoon orange zest
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a medium bowl, whisk together all marinade ingredients.
  2. Reserve some marinade for glazing and add the rest to a large freezer bag with chicken. Seal and marinate for 2–6 hours.
  3. Preheat grill or skillet to medium heat.
  4. Grill chicken for 3–4 minutes on each side until fully cooked (internal temperature of 165°F).
  5. While grilling, simmer reserved glaze until thickened.
  6. Brush grilled chicken with glaze before serving.
