  • 1/8 teaspoon baking soda
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • Cinnamon sugar for swirling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare mini loaf pans with parchment paper.
  2. In a mixing bowl, whisk together the egg, granulated sugar, brown sugar, pumpkin, canola oil, and vanilla until smooth.
  3. Sift the flour, baking powder, baking soda, pumpkin pie spice, and salt over the wet mixture; whisk until no dry streaks remain.
