  • 8 pineapple rings (fresh or canned, drained)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup coconut milk
  • 1 1/2 cups sweetened shredded coconut
  • Vegetable oil for frying
  • For Dipping Sauce: 4 oz cream cheese, 1/2 cup powdered sugar, reserved rum

Instructions

  1. Soak pineapple rings in rum for at least 1 hour. Drain and pat dry.
  2. Set up three shallow bowls: one with flour, one with whisked eggs and coconut milk, and one with shredded coconut.
  3. Bread each ring by coating in flour, dipping in egg mixture, then pressing into shredded coconut.
  4. Heat vegetable oil in a deep pot to 350°F (175°C). Fry the rings until golden brown, about 1 minute per side. Drain on paper towels.
  5. Mix cream cheese and powdered sugar in a bowl; stir in reserved rum for the sauce.
  6. Serve warm with the dipping sauce.
