  • 3 tablespoons olive oil (divided)
  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 1½ cups corn (fresh or thawed frozen corn)
  • 1½ cups cherry tomatoes (halved)
  • ½ cup cucumber (finely chopped)
  • 2 tablespoons fresh basil (minced)
  • ⅓ cup crumbled feta cheese
  • 2 tablespoons Italian dressing (optional)
  • 2 tablespoons fresh parsley (finely chopped)

Instructions

  1. In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, and salt. Set aside.
  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the corn and cook until tender (about 4-5 minutes).
  3. Pour the cooked corn into a large mixing bowl and let it cool slightly. Then add cherry tomatoes, cucumber, and basil; mix gently.
  4. Chill the salad before serving. Just before serving, drizzle with the dressing and top with crumbled feta cheese.
