  • 1 tbsp unsalted butter
  • 4 skinless salmon fillets
  • ¼ tsp salt
  • 1 tsp garlic powder
  • 1 tbsp Cajun seasoning
  • 4 garlic cloves (minced)
  • 1 yellow onion (finely chopped)
  • ½ tsp salt
  • 1 tsp black pepper
  • 3 sprigs of thyme (more for serving)
  • 1 cup orzo
  • 3 ears corn
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan
  • 1 tbsp lemon juice
  • 1 cup heavy cream
  • Chili flakes for serving (optional)

Instructions

  1. Pat the salmon fillets dry with a paper towel.
  2. Season both sides with salt, garlic powder, and Cajun seasoning.
  3. Grate the Parmesan, finely chop the onion, and mince the garlic.
  4. Shuck the corn by removing the husks and silks, then cut each cob in half.
  5. Hold a halved ear of corn upright on your cutting board and use a large sharp knife to shave off the kernels.
  6. Heat olive oil and butter over medium-high heat in a large nonstick pan.
  7. Add salmon fillets to the pan and sear for 3-4 minutes per side until golden brown.
  8. Remove the salmon from the skillet and set aside.
  9. Reduce heat to medium, add minced garlic and chopped onion to the skillet, and cook until soft and fragrant.
  10. Stir in salt, pepper, and thyme leaves.
  11. Add orzo and corn kernels to the skillet and toast for 1 minute while stirring frequently.
  12. Pour in chicken broth, bring to a boil, then reduce heat to medium-low and simmer until orzo is almost al dente.
  13. Stir in grated Parmesan cheese, then add cream and lemon juice; simmer for an additional 2 minutes.
  14. Return salmon to the skillet and simmer everything together for another 2-3 minutes until heated through.
  15. Top with extra thyme leaves, black pepper, and chili flakes if desired. Serve hot.
