  • 4 large flour tortillas
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 2 tbsp olive oil (for cooking)
  • Sour cream (for serving)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Cook chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove and let cool before shredding.
  3. In a mixing bowl, combine shredded chicken with black beans, cheese, cumin, chili powder, and garlic powder.
  4. Warm tortillas slightly in the microwave for easier rolling. Place a generous scoop of the filling in each tortilla’s center and roll tightly.
  5. Place chimichangas seam-side down on the baking sheet. Bake for 25-30 minutes until golden brown and crispy.
