  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • ¼ teaspoon kosher salt

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Mix well and set aside.
  2. Bring a pot of water to boil. Cook shrimp for 2–3 minutes until pink.
  3. Prepare an ice water bath. Transfer cooked shrimp to the bath to cool for about 3 minutes before draining.
  4. Chop the cooled shrimp into bite-sized pieces.
  5. In a large bowl, mix chopped shrimp, cucumber, green onion, and dressing until well combined.
