  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. In a pot, combine with 3 cups water. Bring to a boil, then reduce heat and simmer covered for 20-25 minutes until tender. Drain and let cool.
  2. While lentils cook, prepare the vegetables: chop cucumber, halve cherry tomatoes, and finely dice red onion.
  3. In a small bowl, whisk olive oil and lemon juice; season with salt and pepper.
  4. In a large bowl, combine cooked lentils, cucumber, tomatoes, onion, and parsley.
  5. Pour dressing over salad and toss gently to coat.
  6. Cover and refrigerate for at least 30 minutes before serving to meld flavors.
