  • 2 tablespoons olive oil
  • 2 tablespoons Greek seasoning
  • 3/4 cup crumbled feta cheese

Instructions

  1. Wash the zucchini and trim both ends. Cut each zucchini lengthwise into four pieces.
  2. Brush both sides of the zucchini generously with olive oil and sprinkle with Greek seasoning.
  3. Preheat a stovetop grill pan over medium-high heat.
  4. Grill the zucchini pieces flat side down for about 3 minutes, then flip and grill the other flat side for another 3 minutes.
  5. Finally, turn the zucchini so the skin side is down and cook for an additional 3-4 minutes until tender.
  6. Arrange on a platter, sprinkle with feta cheese, and serve.
