  • 1 large sweet onion
  • 1 large red bell pepper
  • 1/2 cup Italian salad dressing (or marinade of choice)

Instructions

  1. Prepare the vegetables by cutting zucchini lengthwise and slicing into thick pieces; slice onion into layers; and cut bell pepper into chunks.
  2. Marinate the veggies by placing them in a Ziploc bag with Italian dressing. Seal and refrigerate for 4-6 hours.
  3. Preheat the grill pan over medium-high heat, then drain the marinated veggies.
  4. Grill the vegetables in the pan for about 15-20 minutes, stirring occasionally until they are lightly browned yet crisp.
