  • 2 cups boiling water
  • 3 cups curly parsley (minced)
  • 3/4 cup green onion (chopped)
  • 1/4 cup fresh mint (minced)
  • 1 1/2 cups Roma tomatoes (diced)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh-squeezed lemon juice
  • 1 1/2 teaspoon kosher salt

Instructions

  1. Soak the bulgur: Place bulgur in a bowl and pour boiling water over it. Let it soak for about 30 minutes until tender.
  2. Prep veggies: While bulgur soaks, mince parsley and mint, and chop green onions.
  3. Make dressing: Whisk together olive oil, lemon juice, and salt in a separate bowl.
  4. Combine: Drain the soaked bulgur and mix it with the chopped veggies and herbs. Pour the dressing over the mixture and blend well.
