  • 2 lb boneless, skinless chicken thighs (cut into chunks)
  • 1 cup red onion and bell pepper (or any vegetables)
  • 1 cup plain yogurt
  • 6 cloves garlic (minced)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp tomato paste
  • 1 tbsp paprika
  • 1 tsp oregano (dried, or 1 tbsp fresh)
  • 1/2 tsp cumin
  • 2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 2 tablespoons fresh parsley (for garnish)

Instructions

  1. In a large bowl, mix yogurt, minced garlic, olive oil, lemon juice, tomato paste, paprika, oregano, cumin, salt, and black pepper until smooth.
  2. Add chicken chunks and vegetables to the marinade; toss to coat well. Cover and refrigerate for at least 8 hours or overnight.
  3. Preheat oven to 450°F (230°C) and prepare a baking tray lined with aluminum foil.
  4. Thread marinated chicken onto metal skewers; alternate with onion or bell pepper if desired.
  5. Bake skewers on the tray for 20-25 minutes until cooked through (internal temperature should reach 165°F).
  6. Optional: Broil for an additional 2-3 minutes for a charred finish.
  7. Garnish with fresh parsley and serve with your favorite sides.
