  • 2 cups granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canola oil
  • 4 large eggs
  • 1 (15 oz) can pumpkin puree
  • 2/3 cup water
  • 1/2 cup cold butter, cubed
  • 3/4 cup all-purpose flour (for crumb topping)
  • 1 tsp ground cinnamon (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8×4 inch bread pans.
  2. In a large bowl, mix flour, salt, baking soda, and spices.
  3. Stir in granulated and brown sugars until combined.
  4. Add oil to the dry ingredients and mix gently.
  5. Incorporate eggs two at a time until well mixed.
  6. Add pumpkin puree and water; mix until smooth.
  7. Divide batter between pans.
  8. For the topping, combine flour, brown sugar, and cinnamon; cut in butter until crumbly.
  9. Sprinkle topping over batter.
  10. Bake for 55-65 minutes or until a toothpick comes out clean.
  11. Cool in pans for 10 minutes before transferring to wire racks.
