  1. Preheat oven to 350°F (177°C) and grease a 9-inch springform pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
  3. In another bowl, mix oil, sugar, eggs, yogurt, vanilla, lemon juice, and zest until well combined.
  4. Fold wet ingredients into dry until just mixed; avoid overmixing.
  5. Toss sliced peaches with sugar; layer half in the pan followed by half the batter. Repeat.
  6. Bake for 50–55 minutes or until a toothpick comes out clean.
