  • 2⅔ cups all-purpose flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon

  • ¼ tsp ground nutmeg
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg
  • Lemon juice and powdered sugar (for glaze)

Instructions

  1. Preheat oven to 425°F and prepare a muffin tray with cooking spray.
  2. Microwave molasses and butter until melted; stir to combine and cool.
  3. In a bowl, whisk together flour, ginger, baking soda, cinnamon, cloves, nutmeg, and salt.
  4. In the molasses mixture, blend brown sugar, sour cream (or yogurt), milk, and egg until smooth.
  5. Gradually mix wet ingredients into dry ingredients until just combined; do not overmix.
  6. Fill muffin tray to the top and sprinkle with coarse sugar if desired.
  7. Bake at high heat for 5 minutes; then reduce temperature to 350°F and bake for an additional 11–14 minutes until a toothpick comes out clean.
  8. Cool briefly in the tray before transferring to a wire rack.
  9. For the glaze, mix powdered sugar with lemon juice until creamy and drizzle over cooled muffins.
