  • 3 tablespoons minced garlic
  • 1 teaspoon kosher salt
  • ½ cup chopped fresh basil
  • ¼ cup extra virgin olive oil

  1. In a small bowl, combine minced garlic, salt, chopped basil, and olive oil to create a marinade.
  2. Generously coat each chicken breast with the marinade and place in a gallon zip lock bag. Refrigerate for 4 to 12 hours.
  3. Preheat the grill to medium heat.
  4. Remove chicken from the bag, wipe excess marinade from the skin side, brush with olive oil, and season with salt and pepper.
  5. Grill skin-side down for 8-10 minutes, turning halfway through for grill marks.
  6. Flip chicken over and move to cooler grill area; cover and cook until internal temperature reaches 155°F (about another 8-10 minutes).
  7. Let rest for 5 minutes before slicing or serving whole.
