  • 1 1/2 pounds skinless boneless chicken breast or thighs
  • 2 tablespoons fresh squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons dried za’atar or oregano
  • 3/4 cup plain low fat Stonyfield yogurt
  • 3/4 cup finely chopped cucumber
  • Fresh dill and mint for flavor

Instructions

  1. In a mixing bowl, combine chicken pieces with lemon juice, olive oil, za’atar, garlic, salt, and pepper. Marinate in the fridge for at least 120 minutes.
  2. While marinating, prepare the cucumber yogurt sauce by mixing yogurt, chopped cucumber, lemon juice, dill, mint, salt, and pepper in another bowl. Refrigerate until serving.
  3. Skewer marinated chicken pieces onto skewers and grill over medium-high heat for about 5-7 minutes per side until cooked through (internal temperature should reach 165°F).
  4. Let kabobs rest for a few minutes before serving with yogurt sauce and lemon wedges.
