  • 1 large piece of flank steak (3 pounds)
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp soy sauce
  • 1/2 tsp ground chipotle chile powder
  • 2 tsp lime zest (optional)
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine lime juice, olive oil, cumin, oregano, onion powder, garlic powder, soy sauce, chipotle powder, and lime zest.
  2. Place the flank steak in a Ziploc bag and pour the marinade over it. Seal tightly and refrigerate for at least 8 hours or up to 24 hours.
  3. About 30 minutes before grilling, remove the steak from the refrigerator to bring it to room temperature.
  4. Preheat your grill to medium-high heat and oil the grates with a paper towel dipped in olive oil.
  5. Grill the marinated flank steak for approximately 4-6 minutes per side depending on desired doneness.
  6. Use an instant-read meat thermometer to check for internal temperatures: 140-145°F for medium-rare or 155-160°F for medium.
  7. Once cooked, let the steak rest for about 5 minutes before slicing against the grain and serving garnished with fresh lime wedges.
