  • 1 large peach (slightly underripe)
  • 4 (6 oz.) mahi mahi fillets
  • Olive oil spray
  • Juice of 1 small lime (divided)
  • 1 tablespoon minced jalapeno pepper
  • 1/4 teaspoon kosher salt
  • 1 tablespoon minced cilantro
  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your grill to medium heat.
  2. Halve the avocado and peach; remove pits and lightly spray with olive oil before grilling face down for 3-4 minutes.
  3. Chop grilled fruit and mix in a bowl with minced jalapeno, lime juice, cilantro, and salt.
  4. Season mahi mahi fillets with a spice mixture of paprika, chili powder, cumin, thyme, garlic powder, olive oil, and salt.
  5. Grill the seasoned fillets for about 4 minutes on each side until cooked through.
  6. Serve topped with avocado peach salsa and garnish with parsley.
