  • ⅔ cup chopped cilantro leaves
  • Zest of 1 large orange
  • Juice of 2 large oranges (about ½ cup)
  • Juice of 4 limes (about ⅓ cup)
  • 3 tablespoons chopped fresh mint
  • 6 cloves minced garlic
  • 1 teaspoon dried oregano
  • 1½ teaspoons ground cumin
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper
  • 2 beef tenderloins (1 pound each)

Instructions

  1. In a mixing bowl, combine olive oil, cilantro, orange zest, orange juice, lime juice, mint, garlic, oregano, cumin, salt, and pepper. Whisk until well combined.
  2. Place beef tenderloins in a resealable bag or shallow dish and pour the marinade over them. Ensure the beef is fully coated. Seal or cover tightly and refrigerate overnight.
  3. Preheat grill to medium-high heat (approximately 450°F). Clean and lightly oil grates.
  4. Remove tenderloins from marinade; allow to reach room temperature for about 30 minutes. Grill for 5-7 minutes per side until a crust forms and internal temperature reaches at least 135°F for medium-rare.
  5. Transfer to a cutting board and let rest for at least 10 minutes before slicing. Garnish with freshly chopped parsley if desired.
