  • 4 oz. pancetta
  • 5 oz. arugula
  • 3 assorted plums (black, dinosaur, red)
  • 2 slices sourdough bread
  • ½ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice
  • 2 Tbsp. chopped fresh basil
  • 2 Tbsp. pure maple syrup
  • 2 tsp. chopped fresh thyme
  • 1 tsp. Dijon mustard
  • crumbled goat cheese (to taste)

Instructions

  1. Cook the pancetta in a skillet over medium heat until crispy, about 15 minutes. Reserve fat.
  2. Grill plum wedges for 2 minutes per side over medium-high heat until charred.
  3. Grill sourdough slices until golden brown, then tear into pieces.
  4. In a food processor, blend scallion whites, lemon juice, basil, maple syrup, thyme, mustard, and salt until smooth. Slowly add reserved fat and olive oil until emulsified.
  5. Assemble salad by layering arugula, pancetta, grilled plums, sourdough pieces, tomatoes, and goat cheese in a large bowl. Drizzle with dressing and toss gently.
