  • 1 1/2 pounds jumbo raw shrimp (shelled and deveined)
  • 1 large ripe peach (pitted and diced)
  • 1/2 small avocado (pitted and diced)
  • 1/2 medium red onion (thinly sliced)
  • Juice of 2 limes (plus wedges for serving)
  • Kosher salt and freshly ground pepper
  • 2 tablespoons finely chopped fresh cilantro
  • 1 teaspoon tajin
  • 1/4 teaspoon chili powder (divided)
  • Olive oil spray
  • 1/4 teaspoon kosher salt (plus more for salsa)
  • 1/8 teaspoon cayenne pepper
  • 8 6-inch corn tortillas

Instructions

  1. Soak wooden skewers in water for 20 minutes (if using). Alternatively, prepare a grill basket.
  2. Pickle thinly sliced red onion by mixing with lime juice and salt; set aside.
  3. In a bowl, combine diced peach, avocado, chopped cilantro, chili powder, lime juice, and salt to make the salsa.
  4. Preheat the grill to medium-high heat and season shrimp with oil, tajin, salt, and cayenne.
  5. Grill shrimp for 2-3 minutes on each side until pink and firm.
  6. Char corn tortillas for about 1 minute per side.
  7. Assemble tacos by placing shrimp on tortillas and topping with peach salsa and pickled onions.
