  • 1 small yellow squash
  • 1 red bell pepper
  • 1/4 red onion
  • 6 white corn tortillas
  • 3/4 avocado
  • 1/4 cup cilantro
  • 3 tablespoons natural peanut butter
  • 3 tablespoons warm water
  • 2 tablespoons low sodium soy sauce (or tamari for gluten free)
  • 2 teaspoons rice vinegar
  • 2 teaspoons grated ginger
  • 1 teaspoon honey or agave nectar (agave for vegan)
  • 1/2 teaspoon chili garlic sauce

Instructions

  1. Preheat your grill to medium-high heat.
  2. Brush zucchini and squash with olive oil; toss bell pepper and onion with remaining oil.
  3. Grill the vegetables until tender: zucchini and squash for 4-5 minutes per side, onions for 3 minutes per side, and bell pepper for 2 minutes per side.
  4. Chop the grilled vegetables into bite-sized pieces and mix with peanut sauce in a large bowl.
  5. Warm corn tortillas in the microwave for about 30 seconds.
  6. Assemble tacos by filling each tortilla with the vegetable mixture, topped with avocado slices and cilantro.
