  • 1 ripe avocado (peeled, de-stoned and roughly chopped)
  • 1 egg (room temperature)
  • 90 g (1 cup) baby spinach leaves
  • 1/8 red onion (peeled and finely chopped)
  • 1 tbsp chopped coriander/cilantro
  • juice of half a lime
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1/8 red onion (peeled and finely sliced)
  • 1 small piece toast (chopped into chunks)
  • 1 tbsp sour cream
  • 2 tsp sweet chilli sauce
  • 1 pinch black pepper

Instructions

  1. Boil the egg in cold water over medium heat for 5-6 minutes. Drain and cool before peeling.
  2. In a mixing bowl, mash avocado with onion, cilantro, lime juice, salt, and pepper until smooth yet chunky.
  3. In a serving bowl, layer spinach first, add guacamole on top, then halve the boiled egg. Finish with red onion slices, toast chunks, sour cream dollop, and sweet chili sauce drizzle.
