  • 4 boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 can (or fresh) pineapple chunks
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Aluminum foil

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut four large pieces of aluminum foil and lay them flat.
  3. In the center of each piece of foil, place one chicken breast.
  4. Pour 1/4 cup of BBQ sauce over each chicken breast to coat.
  5. Top each chicken with equal amounts of pineapple chunks, bell peppers, and red onion.
  6. Season with salt and pepper.
  7. Fold the foil over the ingredients and crimp edges tightly to seal.
  8. Grill the packets for 25-30 minutes or until the chicken is fully cooked (165°F internal temperature).
  9. Carefully open each packet and garnish with fresh cilantro if desired before serving.
