  • 2 lbs beef chuck roast, cut into cubes
  • 1 cup orzo pasta
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 4 cups beef broth
  • 2 tbsp olive oil

Instructions

  1. Season beef cubes with salt and pepper.
  2. Heat olive oil in a large pot over medium-high heat; sear beef until browned on all sides (about 5-7 minutes). Remove from pot and set aside.
  3. In the same pot, sauté onions and garlic until translucent (about 3-4 minutes).
  4. Return beef to the pot; add diced tomatoes, oregano, and enough broth to cover ingredients by an inch.
  5. Bring to a boil, then reduce heat and simmer covered for about an hour until beef is tender.
  6. Stir in orzo during the last 10 minutes of cooking; cook until al dente according to package instructions.
