Instructions

  1. Preheat the oven to 325°F (160°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar; press into the pan.
  3. In another bowl, beat cream cheese and remaining sugar until smooth. Add sour cream and vanilla; mix until fully combined.
  4. Pour filling over crust and bake for about 60 minutes, until edges are set but center is slightly jiggly.
  5. Allow to cool at room temperature before refrigerating for at least four hours.
  6. Before serving, top with whipped cream and garnish as desired.
