  • 8 oz fresh mozzarella cheese (sliced)
  • 2 large ripe tomatoes (sliced)
  • 1 cup fresh basil leaves
  • ½ cup balsamic vinegar
  • 2 tbsp honey
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. Season the chicken breasts with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat and sear the chicken for about 5-6 minutes on each side until golden brown.

  5. Transfer the skillet to the oven and bake for 15-20 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and cheese is melted.
  6. For the balsamic reduction, combine balsamic vinegar and honey in a small saucepan over medium heat. Simmer until thickened, about 10 minutes.
