  • 1 cup lump crab meat
  • 8 egg roll wrappers
  • 2 green onions, finely chopped
  • 2 tablespoons mayonnaise
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • Sweet chili sauce for serving

Instructions

  1. In a large bowl, gently mix crab meat, green onions, mayonnaise, Old Bay seasoning, salt, and pepper until combined.
  2. Place an egg roll wrapper on a clean surface with one corner facing you. Add about 2 tablespoons of the crab mixture to the center. Fold the bottom corner over the filling, fold in the sides, and roll tightly towards the top corner.
  3. Heat two inches of oil in a skillet or deep fryer to 350°F (175°C). Fry egg rolls in batches for 3-4 minutes on each side until golden brown.
  4. Remove from oil and drain on paper towels. Serve hot with sweet chili sauce.
