  • 8 oz phyllo dough (thawed)
  • 4 cups fresh spinach (chopped)
  • 8 oz feta cheese (crumbled)
  • 1 small onion (finely chopped)
  • 2 tbsp extra virgin olive oil (plus more for brushing)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat 2 tbsp of olive oil over medium heat. Sauté the chopped onion until soft, then add the spinach until wilted; season with salt and pepper.
  3. In a bowl, mix the cooked spinach mixture with crumbled feta cheese until combined.
  4. Lay one sheet of phyllo dough on a clean surface, brush lightly with olive oil, and layer another sheet on top. Repeat this process for four sheets.
  5. Cut the layered phyllo into squares. Place about 1 tablespoon of the spinach-feta filling in the center of each square. Fold to create triangles or parcels.
  6. Arrange on a baking sheet lined with parchment paper, brush tops with olive oil, and bake for 20-25 minutes or until golden brown.
