  • 1 cup cremini mushrooms (sliced)
  • 1 cup shiitake mushrooms (sliced)
  • 2 small shallots (finely sliced)
  • 4 oz herbed goat cheese (crumbled)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a floured surface to about an eighth of an inch thick; cut into squares or circles.
  3. In a skillet over medium heat, heat olive oil. Add shallots and sauté until translucent. Add mushrooms, cooking until browned and tender (about 5-7 minutes). Season with salt and pepper.
  4. Place puff pastry pieces on a parchment-lined baking sheet. Spoon the mushroom-shallot mixture onto each piece, then crumble goat cheese on top.
  5. Bake for 15-20 minutes until the pastry is golden brown.
