  • 1 cup cherry tomatoes
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons red apple vinegar
  • Fresh parsley

Instructions

  1. Boil potatoes in salted water until tender (15-20 minutes). Drain and cool slightly.
  2. Blanch green beans for 2-3 minutes until bright green; drain and cool under cold water.
  3. In a mason jar, combine olive oil, vinegar, minced garlic, parsley, salt, and pepper; shake well.
  4. Slice cooled potatoes and toss with half the vinaigrette and green beans. Let sit for 5 minutes.
