  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey

Instructions

  1. In a medium bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil; stir to form dough.
  3. Knead the dough on a floured surface for about 8–10 minutes until smooth.
  4. Place in an oiled bowl, cover with a towel, and let rise in a warm area for about 1 to 1.5 hours or until doubled in size.
  5. Mix ricotta, mozzarella, Parmesan, lemon zest, and lemon juice in a separate bowl while the dough rises.
  6. Preheat your oven to 475°F (245°C); place a pizza stone or baking sheet inside.
  7. Roll out risen dough on a floured surface into a thin round shape.
  8. Transfer the rolled-out dough onto parchment paper or a pizza peel.
  9. Spread the cheese mixture over the dough and sprinkle with thyme.
  10. Bake for about 10–12 minutes until golden brown and bubbly.
  11. Drizzle with olive oil and honey before serving.
