1 large eggplant (peeled as desired and diced into 1-inch cubes)
2 tablespoons avocado oil
1 teaspoon dried rosemary
1 teaspoon dried thyme
1/4 teaspoon kosher salt (extra for salting eggplant)
1/2 teaspoon powdered garlic
1/2 teaspoon smoked paprika
Instructions
Salt the diced eggplant by placing it in a colander, sprinkling with extra kosher salt, and letting it sit for 10-15 minutes to draw out moisture. Rinse and pat dry.
In a mixing bowl, combine avocado oil, dried rosemary, dried thyme, powdered garlic, and smoked paprika. Toss the eggplant cubes in this mixture until evenly coated.
