  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/4 teaspoon kosher salt (extra for salting eggplant)
  • 1/2 teaspoon powdered garlic
  • 1/2 teaspoon smoked paprika

Instructions

  1. Salt the diced eggplant by placing it in a colander, sprinkling with extra kosher salt, and letting it sit for 10-15 minutes to draw out moisture. Rinse and pat dry.
  2. In a mixing bowl, combine avocado oil, dried rosemary, dried thyme, powdered garlic, and smoked paprika. Toss the eggplant cubes in this mixture until evenly coated.
  3. Preheat your air fryer to 375°F (190°C).
