Ingredients

  • 3/4 cup dry quinoa
  • 2 cups shredded cabbage
  • 2 shredded carrots
  • 1 cup sliced snow peas
  • 1 green onion, sliced
  • 1/4 cup chopped cilantro
  • 3 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce or tamari or coconut aminos
  • 1 tablespoon rice vinegar
  • 1/2 inch ginger root, grated
  • 1/4 cup chopped cashews

Instructions

  1. Cook quinoa in a pot with 3 cups water until tender (12-15 minutes). Strain and rinse under cold water.
  2. While quinoa cooks, prepare veggies and whisk together dressing ingredients in a jar.
  3. In a large bowl, combine cooled quinoa with veggies and pour dressing over. Toss to mix.
  4. Serve immediately or store in an airtight container in the fridge for up to five days.
