  • 110 g almond meal/flour
  • 155 g confectioner’s sugar
  • 90 g egg whites (3 large)
  • 55 g granulated sugar
  • ¼ teaspoon cream of tartar
  • ¼ cup freeze-dried mango (finely crushed)
  • ½ cup (1 stick) unsalted butter (softened)
  • 1½ cups powdered sugar
  • 2 tablespoons coconut milk
  • ¼ teaspoon coconut extract

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a food processor, blend almond flour and confectioner’s sugar until fine; sift multiple times.
  3. Whip egg whites, cream of tartar, and granulated sugar until stiff peaks form.
  4. Gently fold dry ingredients into egg whites until smooth and shiny.
  5. Pipe onto prepared baking sheets and let rest for 30 minutes.
  6. Bake for 15-20 minutes until firm; cool completely.
  7. For filling, whip softened butter until light; add powdered sugar gradually, then coconut milk and extract.
  8. Fill cooled macaron shells with buttercream.
